Luna's Favorite Salad
INGREDIENTS• Spring mix• Shredded carrots • Shredded beets • Chickpeas • Cucumber slices • Feta cheese • 1/2 avocoado |
DIRECTIONS & NOTESThis is my #1 salad that I eat consistently! I typically prepare the ingredients in advance so I can grab from containers and make my salad. I used to create a variation of this salad when I worked at a local cafe. You can find the recipe for the tahini salad dressing I pair with it here. Add chicken for extra protein. |
The Best Peanut Sauce
INGREDIENTS• 1/3 cup of creamy peanut butter• 2 tbsp of rice vinegar • 2 tbsp of tamari or soy sauce • 2 tbsp of maple syrup • 1 tbsp toasted sesame oil • 2 cloves of garlic, minced • 2 tbsp of water |

Tahini Salad Dressing
INGREDIENTS• 1/2 cup of tahini• 2 tbsp of tamari or soy sauce • 1 tbsp maple syrup • 2 tsp of sesame oil • 1 clove of garlic, minced • Water to thin |
DIRECTIONS & NOTESAdd all the ingredients into a blender and blend! If you don't have a blender, you can just shake it together in a jar. I really like using this dressing with my favorite salad. You can find that recipe here! |
